Serves: 2-3 with cashew yoghurt left over
What you need:
Fermented cashew yoghurt
150g raw cashews, soaked overnight in filtered water
2 Tbsp hemps seed
½ tsp good quality broad spectrum probiotic powder
375 ml So Good soy milk
Honey hemp brittle
1&1/2 Tbsp honey
1 tsp hemp oil
2 Tbsp hemp seeds
2 Tbsp flaked almond
1 Tbsp sesame seeds
2 Tbsp cashews - chopped
1Tbsp maple syrup
The zest of quarter of an orange
1 Tbsp. orange juice
1 Modi apple: finely julienned to serve
Step 1: To make the cashew yoghurt, soak the cashews overnight in filtered water. Add the soaked nuts, hemp seeds and probiotic powder to a high speed blender and blitz until creamy. It should be like velvet. Place in a clean jar with lid and put in warm spot for 24 hours – 36 hours. The longer you leave it the more tart it becomes. The speed of which it ferments depends on the warmth of where you place the nut yoghurt. You should be able to see little bubbles forming against the inside of the jar, this is part of the fermenting process. Place in the fridge to slow the fermenting process. Keep in the fridge for 3-5 days
Step 2: To make the honey hemp brittleheat a medium sized fry pan over low heat and melt the honey and hemp oil. Bring to a gentle simmer then add all the other brittle ingredients to the pan. Stir to coat all the nuts and seeds in the honey and simmer for a minute or two until just golden. Tip onto a lined tray sprinkle a touch of sea salt on top. Place another sheet of baking paper on top and press to spread into a thin layer. Refrigerate for 10 -15 minutes until it is firm.
Step 3: To make the berry compotecombine half the berries in the heavy based saucepanalong with the maple syrup and water and bring to a gentle simmer just to release the juices of the berries. Take off the heat and zest in the orange rind and gently toss the fresh berries through the hot pot. Let cool off a little.
Step 4: To assemble spoon some berry compote on the bottom of the bowl along with a pile of crispy apple. Spoon over a couple of tablespoons of fermented yoghurt and top with shards of the honey hemp brittle.
