What you need:

 4 eggs – use location eggs

50ml sanitarium soy milk

Salt flakes

Freshly ground black pepper

30 - 40ml olive oil

80g dairy free tasty cheese, diced, I am using a coconut milk cheese

2Tbsp chives, finely sliced, leave a couple whole to serve

small handful parsley, leaves

 

Method

 

Step 1: Fork eggs lightly and soymilk together in a bowl. Season with salt and pepper.

Step 2: Heat the oil in the pan over medium heat. 

Step 3: Pour in the whisked eggs. 

Step 4: Leave for a minute, the edges will start to cook. Fork eggs slowly dragging the mix into the middle of the pan and then leave to cook for a couple of minutes.  Don’t over cook, it should have the slightest wobble. 

Step 5: When it’s nearly cooked, scatter over the cheese and herbs, leave for 30seconds fold or cigar roll and serve. 

Step 6: Lay a few long chives over the top 

 

Tip:

Dairy free feta would be an alternative to using cheddar.
