You will need

  • 3 eggs 
  • 2 tbsp Liddell's Cream 
  • Couple of pinches of salt 
  • Freshly ground black pepper 
  • Extra Virgin Olive Oil
 

 

  • 1/2 handful of dill fronds 
  • 1/2 handful of basil leaves 
  • 3-4 slices of Tassal Smoked Salmon 
  • 6 Chives 

Step 1

Whisk the eggs together with cream and season. 

 

Step 2

Heat a medium heavy based pan over a medium heat and add a little oil and swirl to coat the pan. Add the egg and leave for 30 seconds then swirl the edges and with a fork drag ribbons of egg into the centre of the pan, then push the runny egg to the sides. Leave for 30 seconds and repeat if need be. Scatter over the basil and dill.

 

Step 3

Slide omelette to one side of the pan and roll itself onto a plate to form a cigar shape. Lay slices of Tassal Smoked Salmon over the omelette. Scatter the remaining herbs and a squeeze of lemon over the salmon and top with chives.
